Thetheri is a crispy and spicy snack prepared by the people of western Odisha and east Chhatisgarh. It is a tea time snack but it is hard to resist munching on this delicious snack .
INGRIDIENTS:
1 cup Rice flour
1.5 cup semolina (suji/rawa)
Salt to Taste(approx. ½ table spoon)
½ tsp spoon Ajwain (Carom Seeds)
Oil to Fry
1 table spoon Cumin seeds
½ inch Ginger
4 slices Garlic
2 green Chillies
PROCEDURE:

1 table spoon Cumin seeds
½ inch Ginger

PROCEDURE:
- Prepare the Masala first by grinding with the cumin seeds, ginger,garlic and chillies.
- Boil 2 cup of water in a Pan.
- Mix the masala with the Luke warm Water, Ajwain and Salt.
- Then add semolina slowly and stir it continuously.
- Make sure the semolina mixes up properly.
- Then mix the rice flour slowly and keep stirring.
- Wait till the dough becomes a little tight.
- Then mash it with hand by putting little oil in your hand and make small balls (approx. ½ cm in diameter) out of it and roll each ball in hand to give cylindrical shape but keep the ends little pointed.
- Put oil in a Pan in medium flame for deep frying.
- Once the Oil gets hot, put them in oil for deep fry.
- Keep frying in low flame until it becomes golden in colour so that it stays crispy.
- Now take them out & put them on an Oil-absorbent Paper for the absorption of extra oil.
- Let it cool for some minutes.
- It's ready to serve now.
